Guilt-Free 7 Layer Dip

7 layer dip you can feel good about!

So, I wanted to find a 7 layer dip that I didn’t immediately regret eating, but that still had really good flavor. Here’s what I found/came up with:

Ingredients:

Pinto beans

Garlic powder

Salt

Avocado

Lemon (juice)

Plain greek yogurt

Taco seasoning

Scallions

Tomatoes (diced)

Sliced black olives

Finely shredded cheddar cheese

(No, I had no measurements)

 

Directions: 

Mash pinto beans. Season with salt and garlic powder. Layer in bottom of dish

Mash avocado. Add lemon juice. Layer on top of beans

Mix plain greek yogurt and taco seasoning. Layer on top of avocado

Add diced tomatoes, scallions and sliced olives on top of greek yogurt

Sprinkle with cheese 🙂
