#NationalPorkMonth – Pulled Pork Chili

In fact, it’s now “award-winning” pulled pork chili!

The Clear Crew is teaming up with the Missouri Pork Producers to celebrate National Pork Month, and this week it was Scotty’s turn again.  And the chili he made ended up winning 1st place in our annual Zimmer Halloween Chili Cook-off!

I had hoped to smoke the pork butt on the grill but the weather didn’t cooperate, so I did it all in the crock pot.  I rubbed the meat and put it in the fridge overnight.  The recipe calls for a 2lb pork butt, but I think I used a little more than that.

This is the recipe I used, with a couple of adjustments…

  • The spices are supposed to be a rub for the pork, but I had already used the Show-Me rub the night before.  So I just used the ones from the recipe as regular ingredients.
  • I left out the cayenne and hot sauce, because I used a hot chipotle salsa.  I used a tablespoon and it provided the right amount of heat, and co-workers at our Zimmer Chili Cookoff really liked it.  But I think I may add a little more next time.
