Liz brought me some fish she caught, so I headed for the kitchen! – Scotty
So last weekend Liz & Will did some fishing at Bennett Spring State Park.
She brought some back for me, so I Googled up a recipe.
It’s an easy recipe and they turned out pretty good. Not as good as frying them would’ve been, but I’m trying to be healthy over here!
The basic ingredients I used…
- balsamic vinegar
- maple syrup
- lemon juice
- red pepper flakes
- green onions
- the fish
I put some parchment on a sheet pan, and salt & peppered the fish. Then I added some green onions.
Then I whisked together the balsamic, syrup, lemon juice and red pepper flakes. The recipe calls for sriracha, but I don’t keep that in stock. Then I just spooned the mixture over the fish.
Then into a 400 degree oven, the recipe says 8-11 minutes. These were thin fillets so I took them out right at 8 minutes. And then spooned a little more sauce on them.
I’m not gonna lie, I’d much rather have a battered up, deep fried piece of fish covered in jalapeno hush puppies…but this wasn’t bad. Nothing earth shaking, but not bad!
