Cranberry and Jalapeño Chicken Salad

I made this the other night and really enjoyed it!

If you love a little spicy and sweet moment this is the recipe for you!

It comes from the One Balanced Life website and only takes about 10 minutes to make.

Ingredients

  • 1.5 cups shredded rotisserie chicken
  • 1/3 cup celery, finely chopped
  • 1 jalapeno, finely diced
  • 1/3 cup dried cranberries, finely chopped
  • 1 tsp apple cider vinegar
  • 1 tsp dijon mustard
  • 2 tbsp plain greek yogurt
  • 1/4 cup + 1 tbsp mayo
  • 1/2 tsp sea salt
  • 1/2 tsp garlic powder
  • 1/2 tsp dill weed
  • 1/2 tsp onion powder

Instructions

  1. Shred chicken breast.
  2. In a bowl, combine shredded chicken and finely diced cranberries, jalapeno and celery.
  3. In a small bowl, combine greek yogurt, mayo, dijon, apple cider vinegar, sea salt, garlic powder, onion powder and dill. Mix to combine.
  4. Pour mix on chicken and mix to combine.
  5. Adjust seasonings if you need.
  6. Top it on toast and serve with more jalapeno on top!
  7. Enjoy!

Next time I make it, I plan on adding an additional jalapeño to the mix to make it a little spicier.
