It was Scotty’s turn to cook some pork from the Missouri Pork Association.
“The best pork cooking I ever do starts the night before. I took about a 6 1/2 lb pork butt, and put some “Show-Me BBQ Rub“. Then I wrapped it in plastic wrap, and then foil, and put it in the refrigerator overnight.
The next day I put it on the grill at around 225-250 degrees, and hit it with some hickory smoke for about 3 hours. I would occasionally spray some apple juice on it for flavor, and to help keep it moist.
After the 3 hours of smoke I put it in the slow cooker. I sliced a big onion and placed three slices on the bottom of the cooker, and put the pork on top of that. Then I poured about half of a Diet Coke over the top of it, and topped it with 3 more onion slices. I also poured some more apple juice in the cooker for good measure.
Then I cooked it on low for 6 more hours. After that, you can pull it apart with a couple of forks and use it however you wish. This time, it was pulled pork sliders. We topped it with some “Sticky Pig BBQ” sauce, some sweet pickles and sweet-hot jalapeños. The crew seemed to love them.
