Another excuse to use fresh baked bread!
Aric recently brought in some of this that his wife Angie makes, and it was really good. So I got the recipe from her and played around with it. I like her’s better. 😄 – Scotty

I used chorizo turkey sausage instead of pork sausage, pepper jack instead of mozzarella, and added onion and green onion. Aric said Angie puts bacon in it sometimes too.
My version…
Sourdough Breakfast Casserole
4 slices of sourdough bread, cut into pieces
12 eggs
1 cup of pepper jack cheese (will do a little more next time, maybe sprinkle on top)
1 onion diced
green onions cut
Cook onions in butter or olive oil. (I used butter) (I had some garlic cloves I wanted to get rid of so I used those too.) Add sausage until cooked, and set aside. Whisk eggs and milk together. (I added pepper, but forgot salt, and it needed a little.) Combine cheese in egg mixture, add green onions if you want. Add sausage to egg mixture.
In a greased 9×13 pan, put in bread pieces. (Angie warns not to cover the bottom. I didn’t listen and it turned into sort of a crust. Not terrible, but not what I was after, will use less bread next time.) Pour eggs and sausage over bread pieces. Cover and cook 40 minutes at 400 degrees. Cook uncovered for another 5-10.
