Scotty Cooks An Old and EASY Favorite

We’ll call it a National Pork Month BONUS recipe!

This is one of my favorites.  In fact it’s one of the few recipes that I make sure I ALWAYS have the ingredients in the house so I’m ready when to spirit moves me.

It’s just a chicken recipe that I really liked, and figured it would work with pork too…and I was right.

INGREDIENTS

  • can (16 oz.) whole berry cranberry sauce
  • bottle (80z.) catalina french type dressin
  • 1 envelope (2oz.) dry onion soup mix
Just mix all of that together in a bowl.  (I don’t always use the full amount of dressing either, sometimes a couple of squirts is plenty.)
Then I spray a 13×9 baking dish with cooking spray.  Put the chicken, or in this case pork loin chops in the dish, and cover with the cranberry mixture.  The chops were small and thin, so I just cooked them for about 45 minutes in a 350-degree oven.
Throw it on a cup of microwaveable brown rice, and some microwave steamed broccoli and you’ve got a good-lookin’ & healthy plate!
